The Right Spice Spice Spotlight: Marjoram
Marjoram is oregano's quieter, more elegant cousin. Where oregano is bold and assertive, marjoram is gentle, sweet, and slightly floral with subtle citrus notes. It's been used in European cooking for centuries and is especially beloved in Polish, German, and Mediterranean cuisines. Most home cooks have never cooked with it specifically, which makes it a perfect Right Spice discovery. It pairs beautifully with chicken, pork, and vegetables and makes your kitchen smell like a warm, herb filled European farmhouse.

What you'll need:

  • 4-6 bone-in skin-on chicken thighs
  • 2 tsp dried marjoram
  • 4 garlic cloves, minced (optional 1tsp Garlic Powder)
  • Zest and juice of 1 lemon
  • 3 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp onion powder
  • 1 lb baby potatoes, halved (optional, it makes it a complete one pan meal)
  • Fresh parsley to garnish

Here's what you do:

  1. Preheat your oven to 425°F. In a small bowl mix together the marjoram, garlic, lemon zest, olive oil, salt, pepper, and onion powder into a paste. Take a moment to smell this, marjoram has a beautiful fragrance that intensifies when mixed with lemon.
  2. Pat your chicken thighs dry with paper towels. Rub the marjoram mixture all over the chicken, getting some under the skin. The under-skin rub is where the real magic happens, it flavors the meat directly.
  3. If using potatoes, toss them in a little olive oil, salt, pepper, and a pinch of marjoram and spread them in a single layer in your roasting pan. Arrange the chicken thighs on top skin-side up.
  4. Roast for 35-40 minutes until the chicken skin is deep golden and the juices run clear when you pierce the thigh with a knife. The potatoes should be tender and starting to crisp at the edges.
  5. Squeeze the lemon juice over everything right before serving. Garnish with fresh parsley.

Right Spice note: Marjoram is delicate, don't let it sit in a very hot pan for too long or it can turn bitter. In roasted dishes like this one it's perfect because the oven heat is gentle and even. The lemon-marjoram combination on roasted chicken is one of the great simple flavor combinations in European cooking.
